Marinated Olives
Serves 3-4 people | Cook Time Approx. 30 mins
INGREDIENTS
• 10oz mixed olives, drained
• 1/4 cup extra virgin olive oil
• 1 sprig of fresh rosemary, leaves removed from the stem and roughly chopped
• 3 sprigs of fresh thyme, leaves removed and roughly chopped
• 1/2 teaspoon dried oregano
• 1/4 teaspoon of lemon zest
• 2 garlic cloves, peeled and smashed
• Livia’s Seasoning Salt
• Red pepper flakes (optional)
PREPARATION
In a skillet, heat the oil, rosemary, thyme, garlic, and red pepper flakes until warmed through. Add olives, lemon zest and 2-3 shakes of Livia’s Seasoning Salt and stir. Remove from heat and serve, or store up to 2 weeks in the refrigerator.
To reheat, warm over low heat in a saucepan and pour the oil over the olives in a dish.
If giving as gifts, you can easily double the recipe.
