Livia’s Best Turkey Brine

Recipe seasons up to an 18 pound turkey

Ingredients

• 4 quarts water

• 1 cup Livia’s Seasoning Salt

• 3 cinnamon sticks

• 8 bay leaves

• 1 cup brown sugar

• 2 sprigs fresh thyme (optional)

• 1 fresh or thawed turkey (allow one day in the refrigerator for each 4-5 lbs. of weight)

Preparation

Combine all ingredients and bring to a boil. Remove from heat and let cool to room temperature before using or transferring to the fridge.

Submerge the turkey in brine, ensuring the cavity is filled. Put it in the fridge overnight for about 8-9 hours. Remove turkey from the brine, rinse and then pat dry. Roast or cook as usual.

Turkey Tips

Roast your turkey at 350 degrees until a thermometer inserted into the breast reaches 170 degrees.

Leave uncovered at first and cover later once the skin browns.

Cooking time varies depending on weight, but rule of thumb is 13-minutes per pound (unstuffed).
